I've recently had someone install skirting and architraves, but there seems to be massive gaps between them and the wall! Good thing it wasn't any of you guys ;) Is there anything I can do to fill in the gap?

If they are large gaps I tend to first time fill with non solvent gripfill this forms a strong bond between wall and timber and stops any movement then when dry I top this of with painters mate

Decorators caulk as this can be painted once dry. But as DG said, it does shrink so you may need to apply a second time once the 1st is dry.

Decorators Calk. Its felxable and does not crack. Easily to do. But note, decorators calk shrinks, so if the gaps are big, you might need to fill twice.
In my experience, i always fill gaps or reduce by scribing...but i do know and seen alot of joiners not fill, and to be fair, its usually down to the decorator as they themselves prefer filling and sanding themselves.
But i personally always fill, just makes the job look better.
